Tomato and Red Pepper Chowder
1 cup cashews
1 cup water
Blend until creamy
Add:
1 cup water
1/4 cup olive oil
1 cup zucchini
6 white mushrooms
2 cloves garlic
1 jalapeno with seeds
2 pitted medjool dates
Salt to taste
Blend again until creamy and pour into bowls
4 Roma tomatoes
1 bell pepper
Dice and add to chowder base.
